Buckeye crumbl cookie

Skip the line at Crumbl and make your own deliciously soft buckeye cookie .You wont be disappointed.




Ingredients

CHOCOLATE COOKIE

1 1/2 c butter

1 1/2 c brown sugar

1/2 c sugar

3 large eggs

2 tbsp corn syrup

1 tbsp vanilla

3 3/4 c flour

1 c cocoa

1 tbsp corn starch

2 tsp baking soda

1 tsp salt

2 1/2 c chocolate chips


PEANUTBUTTER BUCKEYE LAYER

1/3 c butter (softened)

1 1/2 c creamy peanutbutter

1 1/2 tbsp milk

1 1/2 tsp vanilla

a pinch of salt

3 c powder sugar


Directions

  1. Preheat oven to 350 degrees

  2. Cream together butter and sugars ( brown sugar and granulated sugar) until light in color

  3. Add eggs , vanilla , and corn syrup to the mixture. Mix until combined

  4. Add flour, cocoa , cornstarch ,baking soda and salt. Mix until dough forms.

  5. Fold 1 1/2 cups chocolate chips into the dough

  6. Roll batter into 12 even balls of dough

  7. Place balls of dough onto cookie sheet (6 cookies will fit on one cookie sheet)

  8. Take the back of a measuring cup and push the cookies down until they are flattened .

  9. Bake cookies for 15-17 mins at 350 degrees

  10. While cookies are baking prepare your peanutbutter layer .

  11. Cream softened butter and peanutbutter together

  12. add vanilla ,milk ,and salt to your peanutbutter mixture. Mix until smooth

  13. Slowly add powder sugar to your peanutbutter mixture. Continue mixing until a thick dough forms

  14. Form mixture into a log and then cut into 12 even slices.

  15. When cookies have cooled take each slice of peanutbutter dough and roll into a ball.Flatten the ball in your palms and then place ontop of your cookies. Repeat for all 12 cookies.

  16. Take the remaining chocolate chips and microwave them until melted.You should stir in 30 second increments so your chocolate doesn't burn.Once melted spoon ontop of the peanutbutter and enjoy !

These cookies were fairly easy to make and required ingredients you probably already have in your refrigerator and pantry. I will note the cookie dough was thick and it was hard to mix the chocolate chips into the dough.I did end up breaking a spatula so be careful. The cookies turned out chewy and delicious .
